Asian Style Stuffed Rainbow Trout
/Rainbow trout is a delicious and versatile fish, and is an excellent source of fatty acids that are very important in fertility. The asian style filling goes really well with the fish and is a delicious and very easy twist.

Ingredients
1 large whole rainbow trout
1 tbsp desiccated coconut
1 tbsp raw peanuts, chopped
1 large handful of coriander, roughly chopped
2 spring onions, thinly sliced
1 red chilli, thinly sliced (optional)
1 unwaxed lime
Rapeseed oil
Directions
Preheat the oven to 200oC. Line a baking sheet with nonstick baking paper and place the whole trout on top.
Grate a little zest from the lime – around 1 tsp – and place in a bowl with the other ingredients. Season with sea salt and black pepper and squeeze a little lime juice.
Mix this together and then divide the stuffing into the fish cavities.
Drizzle a little oil over the fish skin and bake for 25 minutes.
Serve with rice or noodles, wilted greens and a little soy sauce.
